The tiny, boat-shaped cumin seeds are hand-picked from an annual plant; they resemble caraway seeds. While black, green, and white cumin are seldom seen, brownish-yellow cumin is the most often available kind. Whole cumin seeds, also known as jeera, are used in Indian cooking; ground cumin is used as an ingredient in Mexican and Middle Eastern cuisine, as well as in baked beans, chili, barbecue sauce, soups, and marinades. In addition to being a common component of chili powder, cumin is also often included in other spice mixes, including adobos, berbere, garam masala, curry powder, and achiote blends.
